About 1.5 lbs. of pork loin, trimmed and cut thinly
1 can chipotle peppers in adobo sauce
1 medium red onion, sliced thinly (reserve several slices for salsa)
1 1/2 cups fresh pineapple chunks
Combine the pork and 1 tablespoon of the adobo sauce in a medium bowl. Heat a large skillet over medium-high heat. Heat a small amount of oil. Add the pork and onion; sauté for approximately 4 minutes or until done. Add pineapple chunks to the pork and onion mixture*. Sauté for an additional 2 minutes to heat pineapple thoroughly.
*Add a diced chipotle pepper for more heat.
2 mangoes, diced small
2 avocados, diced small
2 Roma tomatoes, diced
2 Tbsp. diced red onion, reserved from above
1 small red bell pepper, diced
1 Tbsp. fresh cilantro, chopped
2 tsp. lime juice
Combine all ingredients and set aside.
Warm small flour tortillas (fajita-style) and fill with the pork. Top with the fruit salsa.
